Healthy Huevos Rancheros – Take Two

I can’t get enough of this recipe. Evident by the fact that my oblivious-to-the-world five-year-old called me out for always eating the same thing.  But what can I say? It’s flexible and adapts well to whatever you have on hand.  And best of all, it tastes better than anything served at the restaurant joints in my neighborhood (which is really only an IHOP and a McDonald’s but hey, you get my drift).

Instead of the black bean and One Bun Healthy Huevos Rancheros I typically make, today I used a small corn tortilla (lightly toasted in the oven) topped with the following:

  • chopped onions, minced garlic, frozen corn kernels and salsa
    • fry onions until soft
    • add garlic and corn and remove from heat once corn begins to brown
    • mix in a few spoonfuls of salsa just to warm it up
  • fried egg (with a soft yolk)
  • sprinkle of goats cheese
  • a few slices of avocado
  • dash of fresh cilantro

It doesn’t get much better than this, folks!

Apparently I really enjoyed it…
