{RECIPE} Almond Roca Fat Bombs

As I shared in my Week 1 Summary, following a ketogenic diet is actually easier than I thought. I feel full all the time and my body is responding like never before. I have more energy to exercise and despite consuming the same (or higher) net calories than usual, I’m losing weight for the first time in years.

Just when you think it can’t get any better, this comes along…


Step One: make these.

Step Two: eat one.

Step Three: call all your friends and family to come over and stage an intervention before you eat the whole pan and make yourself sick.


Domestica’s Almond Roca Fat Bombs



1 cup coconut oil
2 cups shredded coconut, unsweetened
2 tbsp raw honey
1 tsp vanilla
pinch of sea salt

5 tbsp grass-fed butter
3 tbsp raw cocoa powder
1/4 cup almonds, ground


Line a square pan with parchment paper.
(TIP: I let mine hang over the sides so I can easily pull the square up and out of the pan once they’re set.)

In a small saucepan over medium heat, melt the coconut oil and honey. To get that caramel taste, let the mixture boil for 3-5 minutes (and caramelize slightly), stirring constantly. Remove from heat and stir in the vanilla and salt. Lastly, stir in the coconut and mix until well blended.

Press the mixture into the pan, until evenly spread, and freeze.

While that’s in the freezer, wipe out your pot and melt the butter over medium heat. Once melted completely, whisk in the cocoa powder and whisk until completely blended and smooth. Remove from heat.

If using whole almonds, put them in a food processor and whirl them a few times so they are somewhat ground with little chunks still intact.

Remove the pan from the freezer and pour the chocolate sauce over top, moving the pan from side to side and up and down to get it evenly distributed.

Using your fingers, sprinkle the ground almonds over the chocolate.

Put back in freezer and let set for 10 minutes.

Shout-out to my sister, Vanessa, for inspiring this recipe! I also blame her for my nausea later that night after I ate five of them and my stomach was screaming at me, “WHY DID YOU EAT 500 CALORIES OF STRAIGHT COCONUT OIL?!”. On that note, keep in mind how much fat are in these little guys — eating too many in one sitting is not a good idea!
